Lotus Seed Paste Single Yolk Mooncakes【广式月饼】传统蛋黃莲蓉月饼



Ingredients 材料:

【A】(Mooncake Pastry)
225g plain flour (普通面粉)
180g mooncake syrup/golden syrup (糖青)https://youtu.be/IRjfaawR5tQ
55g peanut oil (花生油)
3g alkaline water(碱水)

【B】(Filling)
1kg homemade lotus seed paste (莲蓉馅)https://youtu.be/lPqA6dtyRPk
50g melon seeds (roasted)(烘香瓜子仁)
8 egg yolks (咸蛋黄)

(1 egg,1 egg yolk and a pinch of salt  , beaten lightly, for glazing )

Steps 
1. Mooncake pastry: Mix ingredients A till well combined.Set aside for 1-2hours. Divide dough into 40g each.

2. Filling: Divide lotus seed paste with egg yolk into 140g each.

3. Wrap lotus seed paste with dough.Roll into balls.

4.Dust mooncake mould with some flour.Tap out excess flour.Place in a mooncake, press gently. Knock out and dislodge imprinted mooncake. Arrange on a baking tray .

5. Bake in a preheated oven at 180 C for 15 minutes. Remove and leave about 15 minutes until slightly cool. Glaze with beaten egg, return into the oven and bake for another 10 - 15 minutes until golden brown.

Note :
Mooncake need between 2 - 3 days to soften and allow the oil to penetrate through the skins.
