1. Mooncake pastry: Mix ingredients A till well combined.Set aside for 2hours. Divide dough into 35g each.
2. Filling: Divide lotus seed paste or red bean paste into 70g each.
3. Wrap red bean paste with dough.Roll into balls.
4.Use black bean seed for eyes, pastry for ears and tail, use scissor to make 2 holes for nose.
5. Bake in a preheated oven at 180 C for 15 minutes. Remove and leave about 15 minutes until slightly cool. Glaze with beaten egg, return into the oven and bake for another 10 - 15 minutes until golden brown.
Note : Mooncake need between 2 - 3 days to soften and allow the oil to penetrate through the skins.

Double-boil all the ingredients until melted and smooth. Remove and leave to cool, add in brandy mix well, wrap with cling film and chill in the fridge until set. Divide into small portions 25g each, round up and coat with cocoa powder.
