Piggy Mooncakes 猪仔饼#公仔饼


Ingredients 材料:

[A] Mooncake Pastry 月饼面糊:
300g plain flour (纯面粉)
240g mooncake syrup/golden syrup (糖青/月饼糖浆) https://youtu.be/IRjfaawR5tQ
75g peanut oil (花生油)
1/2 tbsp alkaline water (碱水)

[B] Filling 馅料:

30g melon seeds (roasted) (烤香瓜子仁)

1 egg (全蛋),1 egg yolk (蛋黄) and a pinch of salt (少许盐)  , beaten lightly(搅拌) , for glazing (上铀)

1. Mooncake pastry: Mix ingredients [A] till well combined.Set aside for 2hours. Divide dough into 40g each.

2. Filling: Divide red bean paste into 40g each.

3. Wrap red bean paste with dough. Roll into balls.

4.Dust mooncake mould with some flour.Tap out excess flour.Place in a mooncake, press gently. Knock out and dislodge imprinted mooncake. Arrange on a baking tray .

5. Bake in a preheated oven at 180 C for 15 minutes. Remove and leave about 15 minutes until slightly cool. Glaze with beaten egg, return into the oven and bake for another 10 - 15 minutes until golden brown.

Note :
Mooncake need between 2 - 3 days to soften and allow the oil to penetrate through the skins.
