Orange Cotton Cheesecake 香橙棉花乳酪蛋糕


Ingredients材料:

【A】
6 Egg whites (蛋白)
90g Caster sugar (细砂糖)

【B】
250g Cream cheese  (乳酪)
60g Butter (奶油)
50g Caster sugar ( 细砂糖)
100g UHT dairy Whipping Cream (动物性鲜奶油)
100ml orange juice (鲜橙汁)
6 egg yolks (蛋黄)
60g Plain flour (面粉)

30g Corn flour (sifted) (粟米粉 (过筛))
1 orange,grated rind (粒橙,皮磨碎)

Steps

1. Double boil ingredients (B), whisk till it is smooth and set it aside.

2. Use medium speed to beat ingredients (A) till soft peaks are formed. Fold lightly into No.1 mixture,  mix till well combined and pour into the 9" mould.

3. Bake in water bath at 150°C for 90 minutes or until the centre is set and golden brown.
